I had my first taste of Pancit Cabagan when my friend introduced it to me last year. We went to "Wok with Joc" located at St. Thomas Square in España Manila where they serve this saucy Isabela delicacy. It really tastes good! So, when I planned this trip, I see to it that I go to where it originated - Cabagan, Isabela.
After visiting Tumauini Church and before heading back to Tuguegarao City, I took a public van to Cabagan and alighted at the town's public market. There are some panciterias in front of it where I ordered this famed pancit.
Pancit Cabagan is a delectable medley of stir-fried, fresh miki noodles mixed with cabbage, chicharo, carrots, baguio beans, spring onions, eggs and topped with crispy lechon de carajay. It also comes with a thick soy sauce-based soup which makes it different from other pancit versions.
So if you're coming from Tumauini or Manila and going to Tuguegarao, drop by the town of Cabagan and experience this scrumptious treat.
