Via Mare, one of the country's most regarded restaurants serving Filipino cuisines is celebrating its 40th anniversary this September. Since it opened its very first Via Mare Seafood Specialty Restaurant on September 5, 1975, it has grown and continue to be a front-runner in the restaurant and catering business.
Few weeks ago, I was invited at Via Mare, St Luke Bonifacio Global City (BGC) to take part in celebrating Via Mare's 40 glorious years. And there is no better way to celebrate this milestone than to indulge on great-tasting Filipino cuisines that the restaurant has been known for through the years.
Here are the dishes we got to try which were created by Chef Glenda Baretto who has been at the helm of the restaurant since its inception.
Tiyan ng Bangus Sinigang sa Miso - milk fish bellies in sour broth with soybean paste and mustard leaves
Ensaladang Suha at Labanos - a refreshing ensemble of Pomelo and Radish served on a bed of greens.
Rellenong Talong - delicious broiled eggplants stuffed with sauteed ground pork and pan-fried with beaten eggs and served with green mango salad on the side. It is sort of a mixture of pork giniling and tortang talong.
Kare-kare - Ox tripe and ox tail in peanut annatto sauce served with bagoong alamang on the side.
Crispy Pata - Pig trotters and knuckles deep-fried to perfection. It's very tender and crunchy!
Pinalutong na Tilapia - deep-fried to a golden crisp. It is served with sol-calamansi dip and sisig sauce.
Pinais na Alimasag - stuffed crabmeat and young coconut steamed in coco cream banana leaves.
Calcag Rice - fried rice cooked with sun-dried shrimps, bagoong and scrambled eggs.
Puto Maya - glutinous rice steamed with coconut cream and served with ripe mango.
Bibingka - the famous rice cake filled with slated eggs and topped with grated coconut. One of the best bibingka I've tasted!
Sago - a thirst quencher made of perfectly-cooked tapioca in caramel ice.
